Vinification: The grapes were destemmed in an open press, where they macerated for 4 days using bare feet. The vinification and ageing use only the natural process of grape fermentation, without the addition of oenological products other than a small amount of sulphur dioxide (SO2) for preservation purposes.
Aging: 11 months in the same barrels on lees.
Tasting notes: This white wine is a fascinating blend of Arinto and Fernão Pires, two local grape varieties. Aromas of anise and spices, with a hint of salt and citrus on the palate. The Arinto provides a fresh acidity that frames the long finish. A dynamic white wine with a unique Portuguese character.
