Technique
20 months of bottle ageing, after the second fermentation. Sparkling base wine after 1 year of ageing in stainless steel tank.
Climat et Sol
High-altitude plain, with temperature fluctuations, very hot in summer and windy and snowy in winter.
Vinification
The grapes go directly to the press with destemming and without crushing. Cold decantation for 24 hours; 100% fermentation in stainless steel tanks at controlled temperature. 100% malolactic fermentation.
Température de service
Store at 06-08ºC and serve at 9ºC.
