Vinification: Part of the harvest is crushed in marble lagares and the rest fermented in temperature-controlled wooden vats, followed by a long maceration.
Aging: 9 months in American and French oak barrels.
Tasting notes: An aroma suggestive of very ripe black fruit, blending beautifully with the spices imparted by the barrels. Intense garnet color. Elegant and full-bodied with soft tannins. A powerful, full-bodied wine.
Food pairing: Ideal for game dishes, game birds such as pheasant, quail and partridge, roasted or grilled meat, cheese and delicacies (foie gras, pâté, prosciutto).
