Grape: Rabo de Ovelha

Winemaking: Manual harvest. Full destemming. Pre-fermentation maceration for 8 to 12 hours. Vacuum pressing, fermentation at a controlled temperature (15ºC to 18ºC) in stainless steel tanks for 10 to 15 days.

Aging: 4 months in 400-liter barrels

Tasting Notes:
Color: Citrus yellow
Aroma: Complex aromas of tropical fruits and orange blossom.
Palate: Very fresh with good acidity. Mineral and harmonious.

Food Pairing: Seafood, grilled fish, and salads.
