Winemaking: The grapes were de-stemmed in an open press, where they macerated for 4 days with foot treading. The winemaking and aging process only uses the natural fermentation of the grapes, with no added oenological products other than a small amount of sulfur dioxide (SO2) for preservation.

Aging: 11 months in the same barrels, aged on the lees.

Tasting Notes: This white wine is a fascinating blend of Arinto and Fernão Pires, two local grape varieties. Aromas of anise and spices, with a hint of salt and citrus on the palate. Arinto provides fresh acidity that frames the long finish. A dynamic white wine with a uniquely Portuguese character.

Food Pairing: Excellent with tuna, bacalao (salted cod), rice, white meats, and charcuterie.
