Vinification: The grapes are chilled in a cold room before vinification. Fermentation begins in temperature-controlled stainless steel tanks. After a third of the alcoholic fermentation, the must is racked into new and old barrels, where it completes its fermentation.
Aging: 8 months in French and Hungarian oak barrels.
Nose: Citrus fruits such as grapefruit and lemon, accompanied by a slight toastiness due to barrel aging, are very subtle and therefore do not overpower the fruity flavors.
Tasting notes: Crystalline white wine. Citrus accents, such as grapefruit and lemon, complemented by toast from the barrels but not overtaking the fruit. On the palate, it reveals great freshness and minerality, with some traces of fat from aging on lees.
Food pairing: The perfect aperitif with white meat dishes, cod, seafood, stewed fish and even pork tenderloin and risotto.
